In this special collaboration with Michigan-based chocolatier Crow & Moss, Eva Masaki sourced a rare salt—Akō Aranami sea salt—from her mother's village of Akō, Japan. Harvested from the Seto Inland Sea, the coarse, raw salt is refined in an Akō-produced bittern (the concentrated liquid left after brine evaporation) using centuries-old traditional methods. Known for its mellow flavor and mineral-rich composition, Akō Aranami salt is revered by Michelin-starred Japanese chefs and was designated Japan Heritage status in 2019.

In this limited-edition blend, Akō Aranami salt is paired with single-origin India Anamalai chocolate. The lively, awakening crunch of the salt contrasts elegantly with the fruit-forward cacao, carrying bright notes of mango, lime, and honey. Crow & Moss—led by professional baker and chocolatier Mike Davies and family—operates a workshop (the "chocolatery") in Petoskey, Michigan. Davies worked closely with Eva to harmonize this distinctive pairing.

The inspiration for this collaboration began when Eva's mother returned from a recent visit to her own mother (Eva's grandmother) in Akō, bringing the rare sea salt back as a gift. The packaging features the Masaki hanko—a personalized stamp engraved with her family name in kanji, traditionally used to sign official documents in Japan. Passed down from Eva's mother when Eva first moved to Japan, the stamp is printed here in a reddish-orange hue, echoing the traditional ink used for official seals.
